One-Pan Brussels Sprouts with Bacon and Sunflower Seeds

Ingredients
1 lb (450 g) fresh Brussels sprouts, trimmed and halved
4-5 slices of bacon
2 green onions chopped
2 tbsp unsalted butter
1/4 cup sunflower seeds (unsalted)
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
Salt and black pepper, to taste
Instructions
Cook the bacon:
Heat a large skillet over medium heat. Add bacon and cook until crispy. Tansfer the bacon to a paper towel-lined plate, leaving the rendered fat in the pan.Toast the sunflower seeds:
Add butter to the skillet with the bacon fat. Once melted, toss in the sunflower seeds. Fry them over medium heat for 1-2 minutes, stirring frequently, until they’re golden and fragrant.Cook the Brussels sprouts:
Add the halved Brussels sprouts to the skillet. Season with garlic powder, smoked paprika (if using), salt, and pepper. Stir to coat the sprouts in the butter and bacon fat.Sauté until tender:
Cook the Brussels sprouts for 8-10 minutes, stirring occasionally, until they’re tender and caramelized. Reduce the heat slightly if they brown too quickly.Combine and serve:
Stir the crispy bacon back into the skillet along with chopped green onion. Taste and adjust the seasoning if needed. Serve immediately, straight from the pan, for a delicious and easy side dish.
